What is ‘Osechi’ & how is it related to Japanese New Year’s?

Specific seafood, vegetables, and fruits are prepared as part of osechi to usher in prosperity for the new year. These colourful dishes are meticulously prepared a few days in advance and presented in ornate lacquer boxes, allowing families to enjoy them once the clock strikes midnight.

Symbolic ingredients are used to prepare osechi. For example, prawns signify longevity as they resemble a hunched person, herring roe for fertility because of its abundance of fish eggs, and rolled omelettes to herald scholarship as they look like rolled-up paper scrolls.
